A BUSINESSWOMAN has described her first year on site as “a huge learning curve”.
Permission was given to Catherine King and The Picnic Box to be based at Longniddry Bents No 2 for a year.
Now, she is looking for East Lothian Council to extend that permission for the mobile coffee and snack bar.
In a letter to the council’s planning department, she said: “We were granted a year’s planning permission and asked by the planning department to renew after a year.
“This last year has been a huge learning curve for us, but we have been well received from the community and enjoy community support.
“Before beginning our renewal process, I have spoken with Longniddry Community Council to see if they are happy with us and their reply was positive and supportive of this application.”
The business, which specialises in cake, sweets and ice cream, as well as hot drinks, is hoping to remain on site for another three years.
